The Healthiest Dinner You Can Serve

Regardless of what most health industry experts will tell you, I maintain that one of the healthiest meals you could serve is a reverse seared, grass-fed organic ribeye beef steak. In fact, I would even recommend you eat it every day if you wanted to.

But What About My Cholesterol?

Let’s first understand what cholesterol is. Cholesterol is a substance made in your liver through a very energy intensive process.  So, why would your liver go out of its way to make something that is a poison? Cholesterol is a building block for making sex hormones and adrenal cortical hormones that are vital to your health. I will clarify, yes, it is absolutely true that cholesterol clogs arteries; however, it is the burnt (oxidized) cholesterol that clogs your arteries.  So don’t be afraid of all cholesterol, just the burnt kind. This is why I cook using the reverse searing method, it’s the best way to ensure you don’t overcook your meat and ingest toxic burnt cholesterol.

What is Reverse Searing?

Reverse Searing is the process where you slowly cook the meat in a low temperature oven, ensuring an even temperature throughout, allowing the meat to rest to maintain its juices, and then if you prefer, searing each side in a very hot cast iron skillet for the crispy texture. This technique will guarantee medium rare or even rare meat (even better) throughout, whereas if you follow the traditional technique of searing and then cooking the meat in the oven, you’ll have well done on the border and medium rare in the middle.

Why Grass-Fed Organic Ribeye?

Organic dairy, vegetables, and especially meat are extremely important. The natural diet for cows is grass; unfortunately, most commercially available beef is corn fed, which results in unhealthy fats in the meat.  Therefore, grass-fed, organic beef is the healthiest. In general, organic food, grown or raised without the poisonous antibiotics or pesticides, and NOT genetically altered is optimal.  I personally enjoy cuts like ribeye, because it is a fatty piece of meat, very flavorful, and cooks well with this technique. As I mentioned cholesterol, as long as it’s not burnt, is actually quite good for you. The healthy fats found in grass-fed beef helps maintain normal blood sugar and insulin levels within your bloodstream, which left uncontrolled would create unfavorable conditions in your body that can contribute to obesity, high blood pressure, heart disease and other problems.

The Recipe

Preheat your oven to 275 degrees. Take a 1 ½ inch to 1 ¾ inch organic, grass-fed ribeye steak and salt and pepper on each side. Place your ribeye on a baking sheet with foil and cook on 275 degrees for about 35 to 45 minutes, depending on desired doneness. Let the meat rest for about 15 minutes. In a hot skillet, quickly sear each side (about 30 seconds each) to get a crust. Then feel free to serve immediately with a side of organic vegetables or a salad.
